Desi Pakora

Serves 10 | Preparation 20 minutes | Cooking 10-15 minutes
Ingredients

2 medium potatoes, peeled and chopped

1 large aubergine, chopped

4 medium onions, finely sliced

1 tbsp coriander seeds, finely crushed

3 cups gram flour (besan)

1 egg, beaten

2 tbsp green chilli paste

3 tsp salt

4 tsp coriander powder

2 tsp cumin powder

1⁄4 tsp turmeric powder

1 tsp baking powder

1 cup water

1⁄2 cup fresh coriander, chopped

½ bunch fresh spinach, chopped

Oil for frying

Tip

If frying later, then prepare the dry ingredients and leave aside. Beat in the egg and water just before frying.

Preparation

In a large bowl, combine all the ingredients except the oil and mix well.

Heat the oil on a medium to high heat and lower 1 tablespoon of mixture into the hot oil.

Deep fry the pakoras a few at a time until golden brown in colour.

Serve with mint sauce.
